To make this dish I started by cooking some instant rice and setting it aside.

The I dumped some ground beef into a large frying pan.

I crumbled the ground beef well as it cooked.

I added some diced onions to the pan with the ground beef while it was cooking.

I stirred the ground beef and onions together and continued cooking.

Once the ground beef was cooked, I drained the excess grease from the pan.

Then I added in some milk, canned corn, condensed tomato soup as well as the cooked rice.

I stirred it all up and allowed it to simmer for about ten minutes.

Then I reduced the heat and stirred in some shredded cheddar cheese.

I also sprinkled some more cheddar cheese on top and left it to melt.

Once the cheese was completely melted it was ready to serve.

Ingredients You'll Need to Make This Cheesy Tomato Ground Beef and Rice:

  • 1 1/2 cups instant rice, uncooked
  • 1 lb lean ground beef
  • 1/2 cup yellow onion, diced
  • 8.5 oz canned corn
  • 10.75 oz condensed tomato soup
  • 1 cup 2% milk
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tbsp dehydrated minced onion
  • 1/2 tbsp dried chives
  • 2 1/2 cups cheddar cheese blend, shredded

Instructions:

  1. Prepare the instant rice according to the directions on the package and set aside.
  2. In a large frying pan over medium-high heat fry up the ground beef with a dab of butter or margarine.
  3. While the beef is cooking add in the diced onions.
  4. Once the ground beef is fully cooked, drain the excess grease from the pan.
  5. Then reduce heat to medium and add in the corn, tomato soup, milk and cooked rice. Stir well.
  6. Add the salt, pepper, minced onion and dried chives. Stir well again.
  7. Allow the mixture to simmer for about ten minutes and then stir in 2 cups of the shredded cheddar.
  8. Sprinkle the remaining 1/2 cup of cheese on top and don't stir.
  9. Allow the cheese to melt and then serve.
